In the world of cocktails, the Bloody Mary is very much a contradiction. Instead of being blamed for a hangover, it is used as the cure. And rather than being consumed at night, the spicy concoction is best imbibed the morning after.
 
Prawns have always been popular in Cordoba, traditionally shipped in on the incoming tide of the Guadalquivir River. This is a quick, light and succulently salty tortilla. If you can't find nettles, use English spinach instead.
 
At its simplest, this traditional Lebanese dish is made with lentils, rice, onion and water. I have added spices. The onions should be cooked really well with lots of blackened, crunchy bits. To make a creamy, thickened yoghurt, drain through a colander or sieve lined with muslin or a new Chux kitchen cloth.
