A vibrant and robust Catalan classic. I've adapted this dish from a recipe by food writer Coleman Andrews. I prefer cooking the eggplant over an open flame to give it a touch of smokiness and depth; it can be done in the oven as well. The chicken is first roasted in the oven and then the samfaina is added to the pan to combine flavours.

This version is made with baby chicken, braised in sweet white wine, with baby vegetables. Baby chickens, or poussins, are a little out of vogue at the moment but I love their delicate flavour and convenience when cooking for two. I am a one-pot man in my kitchen, as I hate cleaning up and I hate to leave the mess for my wife! This dish goes well with a crisp Gewurztraminer.

Leftover roast chicken carcasses make great stock.
 
We are inclined to use dates more for baking cakes and biscuits, because most Australians have been brought up on semi-dried and dried dates, but keep an eye out for big, meaty fresh medjool dates - they taste as good as chocolate and are certainly more healthy.
