A beautifully light cake that is lovely served with whipped cream. I have had great results using even the most ordinary Granny Smith apples, but if you can get your hands on some Bramley's or Cox's Orange Pippins all the better!

This is delicious served with butter while still warm from the oven. It keeps quite well and can be lightly toasted. I have also had success with dried yeast, but if you can, buy some fresh yeast from a baker and appreciate the difference in flavour.

An exotic cake from Egypt that combines fried almonds with semolina and yoghurt and is then finished with tangy, lemony syrup. I learned this recipe from Greg Malouf while cooking with him at O'Connell's many years ago. It's one of my favourite cakes.
