Kangaroo meat is far leaner than other red meats, and a good deal cheaper too. A lot of people still feel squeamish about eating kangaroo. "I think that's really silly ... not only does it taste great, it's healthier than regular mincemeat and is great for the environment," Samantha Day says.
 
This recipe is inspired by the specialty from Provence called pissaldiere. We've included eggplant for added flavour and richness. It's one of the tastiest tarts I've ever eaten.

This is an excellent finger food that can be prepared a few hours ahead and is perfect for the festive season.
 
Skinless fish fillets can get a bit on the boring side, so use a simple wrap of prosciutto for extra flavour and crispness. Look for more sustainable fish, such as flathead, snapper, whiting or bream.

Arancini can be made from leftover risotto. If you can't find small bocconcini, use cubes of mozzarella instead. Make sure you season the mix well. Add some fresh herbs for extra flavour. These rice balls are best served hot and are delicious with a spicy tomato dipping sauce. Arancini can be made ahead and refrigerated or frozen, uncooked or cooked. Reheat in the oven before serving.
