Fettuccine with Creamy Mushroom Sauce  Recipe
Any variety of mushroom will work in this creamy vegetarian pasta sauce, but we particularly like a combination of shiitake, oyster and cremini. Adding a few wild varieties, such as chanterelle or lobster mushrooms, will make the sauce extra-special.
 
Ravioli with Arugula & Pecorino Recipe
Elevate frozen ravioli with sizzled garlic and shallots, shaved pecorino and fresh arugula. Serve with: Whole-grain baguette and a light-bodied red wine, such as pinot noir.
 
Pasta with Turkey Sausage and Smoked Mozzarella

Have you ever tried smoked mozzarella cheese? It's sort of like a mozzarella version of gouda. I had never encountered it until my father used it in a recipe he got from a local butcher shop. This is the recipe, with lots of changes from the original which called for three times as much cheese. We found with this cheese that, unlike regular mozzarella which is quite mild in flavor, a little smoked mozzarella goes a long way. We've made this several times; it now makes a regular appearance in my parent's home because it's quick, filling, and quite tasty. It also makes terrific leftovers.

Classic Pasta Primavera

Remember the 70s? Please welcome Hank Shaw as he shares one of his favorite restaurant pasta dishes from that era, pasta primavera. ~Elise

Pasta primavera. Itโ€™s very name evokes the 1980s, nouveau cuisine, and bad food clichรฉs. Done in its classic form, which is believed to be invented by the chefs at Le Cirque restaurant in New York City in the late 1970s, primavera is a riot of vegetation doused in butter, cream and lots of parmesan cheese. Our version is a pared down rendition of this classic, simplified and lightened up for more modern tastes.

Why resurrect pasta primavera at all? Because despite all the jokes, it was โ€“ and is โ€“ a good dish. Any of us who ate in high style in the late 1970s, or really anywhere in the 1980s, has eaten it at some point in our lives. I ate it a lot. My mother first had it at Le Cirque sometime around 1979, and loved it so much she learned how to make it.

A seasonal twist on everybody's favourite pasta alla carbonara, using zucchini instead of bacon. The principle remains the same: the heat of the freshly drained pasta cooks the eggs and cheese into a creamy sauce.

The bright and beautiful colours of spring are caught in a bowl of seasonal vegetables that are infinitely variable: try thin asparagus, sweetcorn, baby green beans, cherry tomatoes, baby turnips, golden beets, broccolini.
 
To make the breadcrumbs, tear stale sourdough or baguette into pieces and whiz in a food processor.
 
In medieval times, health manuscripts preached the virtues of pine nuts as a power "to stimulate the libido". The Arabic scriptures recommend a drink of honey and eating 20 almonds and 100 pine nuts before going to bed. After repeating this for three days a man would acquire vigour. Well, I suppose this partly explains my addiction.
 
Leeks are often grown in sandy soil and they can, at times, be a little tedious to clean thoroughly. Iย’ve found the best way to do this is to pare back the first two or three layers and cut the top off where the tender white part ends. With a sharp knife, starting at the top, make an incision down the leek, about 4-5cm long, into three or four layers. Make another two or three incisions, working around the top of the leek. Fill a bowl with cold water, place the cut end of the leek in the bowl and shake vigorously.

Although potato gnocchi remains the most common version, the dish can be made with pumpkin, sweet potato or breadcrumbs, or flavoured by mixing the dough with spinach, saffron or truffles.
 
Anyone who grows their own broad beans will know many beans can be harvested from just a few plants. Though the pods can grow to 30 cm, if they're picked early - about the length of a pinkie, they can be cooked pod and all without bitterness. Shop-bought broad beans must be double-peeled ย– once out of the pod and again out of their individual jackets.
 
Cous cous, the quickest of all grain dishes, originated in Morocco and forms a staple food in Moroccan and North African cookery.
 
Traditionally made with the small ear-shaped pasta known as oriecchette. However, the flavours are just as delicious when made with home-made thin strands of linguine.
